The Laboratory

An English style brewery with English style beer run by a stylish English couple.

The patrons of the Laboratory will go to great pains to tell you this does not mean 'Warm" Though the tap beers are served a few degrees warmer than the chilled products, this is a feature of their creation process, where the second round of fermentation takes place in a 'firkin'. The serving is directly from here rather than a cold keg. The punters love it. The 'laboratory' comes complete with hospo spaces called the Classroom, Mezzanine and Beer Garden. They can accommodate functions and parties and serve a variety of meals from pub pizzas through to classier fare. The laboratory is student, bike and dog friendly, and they also have wine on tap, all of which could account for the venue's immediate popularity in Lincoln.

If you want to take the beer away, they will fill your flagon, but are keen to promote their own styley glass flagons. The only thing they are not promoting here is television sport, they promote conversation.

Perhaps the proudest feature of this new pub for the immigrant publicans, Lisa and Marin Bennett (also of the Twisted Hop in Woolston) is that it is in part, very old. They made sure that their new build included a veritable plethora of salvaged materials from all manner of Canterbury Buildings demolished following the earthquakes. The result a safe building, stuffed with history.
